Cauliflower-Feta Fritters with Cumin Yogurt and PomegranateMy poor husband.  I don’t say this lightly, because I truly enjoy reminding him what a lucky man he is… most of the time.  But when it comes to this, I admit it’s not easy being my significant other.

See… he’s not allowed to “not like” foods.  I mean, technically, he is… but I don’t take it well.  I feel the need to take up that banner of that food and convince him that he really does enjoy said food, if only he had it prepared the right way, or in the right circumstances, or from the right source.  It starts innocently enough.  He says, “You know, I’ve never been a big <insert food/ingredient here> fan.  I just don’t like it.”  Me: “WHAT?!?!

Creamy Tomato-Basil Soup

Creamy Tomato-Basil SoupFor a long time, if you asked me what my absolute favorite meal was, I would reply, “Grilled cheese and tomato soup,” without any hesitation.  Now, I have always loved a grilled cheese and still do, with a passion, in fact.  But over the years, I realized that the other half of that duo was just not holding up its end of the bargain. I would dutifully make my can of tomato soup to go with my sandwich, and while it kind of worked as a counterpoint to a perfectly toasty, cheesy sandwich, it mostly just sucked.  I know this is impolitic of me, but regular tomato soup is just so boring.  The terrible mediocrity of it is what made me give up on the idea that grilled cheese and tomato soup was, indeed, my favorite meal.  Something that most closely resembled ketchup water had no place in any of my favorites lists.

Mushroom, Spinach, and Feta Crustless QuicheYou may have noticed that I don’t have a whole lot of breakfast recipes around here.  It’s not that I have anything against breakfast, or that I don’t like to cook it.  It is true, however, that I have no interest in things like blueberry cheesecake stuffed french toast or cinnamon roll pancakes with cream cheese-butter-maple-syrup icing. Those things sounds delicious, but, in all honesty, I think if I ate them for breakfast I think I would either pass out from the sheer force of sugar or, at the very least, not make it til  nap time.

Pretzel Rolls

Pretzel RollsIs there anyone who doesn’t love a pretzel roll? To me, the perfect pretzel roll is flavorful, light and fluffy on the inside, with a dark brown, chewy (but not crisp) crust, and a hefty sprinkle of salt on top.  All the best parts of a really good pretzel, but with the versatility and unfussiness of a bun or roll.  They’re easy enough to find in a grocery store these days, but with a few exceptions, they are pretty unremarkable.  Some are too dense, while others are all fluff with no chew to the crust.  Nothing disappoints like the promise of a delicious pretzel roll unfulfilled.
